the first recipe


this is the recipee for the shrimp etoufee I cooked last night .  It was excellent

Shrimp Etoufee

2lbs peeled deveined shrimp
2 medium onions chopped
1 stalk celery chopped
1 bell pepper chopped
3 cloves garlic minced
1 14.5oz can diced tomatoes
1 8 oz bottle clam juice
1/4 cup fresh parsley
1/2 tsp black pepper
1/2 tsp white pepper
1/4 -1/2 tsp cayenne (depending on how hot you want it)
couple of dashes of tabasco sauce
1/2 cup vegetable oil
1/2 cup flour

In a medium sized dutch oven heat the oil until hot
slowly whisk in the flour
cook the mixture over medium head stiring continualy for 10-15 minutes until its the color of peanut butter (your making a roux)
stir in the onions,bell pepper,garlic and celery cook until they are soft 5-10 minutes stirring occasionally
add the tomatoes ,clam juice,white pepper,black pepper,cayenne,parsley and tabasco
bring to a boil and simmer 15 minutes stiring occasionally
add the shrimp and cook 5 minute until shrimp turn pink
serve over rice
