Barbecued Ribs


Here is a recipe for BBQ ribs.  it takes a long time to BBQ but the actual procedure is fairly easy.  I cooked this tonight and both Tara and I (and the dogs) really liked them

2 full slabs baby back ribs cut into 1/2’s
wood chips soaked in water for 1 hour
dry rub of your choice (i use salt lick dry rub)
BBQ sauce of your choice (I use sweet baby rays)

Mop/basting  sauce
4 cups apple juice
1/2 cup apple cider vinegar
1 cup diced onion
1/2 cup honey
10 whole cloves
1/2 tsp cayenne pepper (may be omitted)

Add all mop sauce ingredients to a medium sauce pan,bring to a boil reduce heat to low and simmer 10 minutes. set aside

Cooking the ribs

Prepare a BBQ for indirect heat. Heat the BBQ to about 300 degrees
while the BBQ is heating remove the tough membrane from the ribs. Coat with the dry rub and let sit at room temp for 30 minutes.
throw the wood chips onto the BBQ to create smoke
place the ribs in a rib rack and cook over indirect heat for 1.5-2 hours. Baste half way through with the mop sauce

Pour the remaining mop sauce into a foil pan large enough to hold the 4 rib halves and add the ribs. there should be a decent amount of mop sauce left after the basting (4 cups or so. you want the mop sauce to cover the bottom of the foil pan and come up 1/2 inch or so at least on the ribs. if you dont have enough mop sauce left pour apple juice into the pan. cover tightly with foil and put back into BBQ for 1 more hour.
remove the ribs from the mop sauce.

Coat the ribs with BBQ sauce of your choice place back on grill and cook over direct heat for 10 minutes bone side down.

Serves 4
