Thai Style Shrimp


Quick and Easy

2 Tbsp vegetable oil
1 lb shrimp peeled and deveined
1 red bell pepper diced
2 cayenne or thai chiles chopped
juice and zest of 1 lime
2 Tbsp fish sauce
2 Tbsp butter
1 clove garlic chopped
1 Tbsp brown sugar
3 Tbsp fresh basil,chiffonade (cut into thin strips)
2 Tbsp fresh mint chopped

Heat the oil over medium-high heat. Add the shrimp,bell pepper and chiles. saute 2-3 minutes until the shrimp are almost done
Add the lime juice and zest,fish sauce,butter and garlic. Saute 1 more minute
add sugar,basil and mint. saute 1 more minute
serve over rice
