noodle kugel


heres the recipe for the noodle kugel I made for sharon and rowlands.  excellent and not to difficult

8 Oz package wide egg noodles
3 apples cored but unpeeled
1 8oz can crushed pineapple
1/2 cup butter melted
8 oz package cream cheese cut into small pieces
1 cup milk
4 eggs slightly beaten
1/2 cup sugar
1 tsp vanilla
3 Tbsp sour cream
1/2 cup raisins

Cook noodles and drain
grate apples in a food processor adding teh crushed pineapple as you grate
pour noodles into a large bowl
toss the noodles with the melted butter
add the cream cheese and  mix well
add the remaining ingredients and mix well
pour into a 9×13 non stick baking pan
bake at 350 for 1 hour


Rich Spaghetti Sauce


I had time to cook today and wanted a richer sauce then I usually make. I made this up and asked Tara what she thought.  she loved it.

Its easy but it takes a while to cook

2 lbs smoked pork neck bones
28 oz can diced tomatoes
14 oz can diced tomatoes
6oz can Tomato paste
1 cup red wine (I used Merlot)
1 large yellow onion diced small
8 oz sliced mushrooms
5 large cloves garlic minced or pressed
1 Tbsp sugar
1/4 cup olive oil

heat olive oil in a large fry pan until hot.
add the onions,mushrooms and pork bones.
cook over medium high heat 8 minutes or so turning the bones occasionally until the bones are nicely browned and the onions have started to brown
add the tomatoes remaining ingredients
Bring to a boil and lower heat to a simmer.
simmer for 2 hours with the lid off stirring occasionally
put cover on pan and simmer 1 1/2 hours more

If the sauce seems to be as thick as you want you can put the lid on earlier.
Remove the neck bones before spooning over spaghetti

Makes 6-8 servings
