stovetop alder smoked salmon

Standard

this is an asian marinated smoked salmon done with a stovetop smoker. very good and easy
1 Lb fresh wild caught sockeye or king salmon
1 Tbsp alder chips for the stovetop smoker,or follow smoker directions
marinade:

1/2 cup rice wine vinegar
1/2 cup soy sauce
2 Tbsp honey
1 tsp ground ginger
3-4 cloves garlic crushed in a garlic press
1 tsp lemon pepper

mix the marinade ingredients together. pour into a ziplock bag,add the salmon and marinate 30-45 minutes turning once

Following the directions for your smoker smoke the salmon for 15-18 minutes,until it flakes

scallop and artichoke pasta sauce

Standard

a simple sauce for pasta. makes enough for 1lb pasta /4 servings

1 lb bay scallops (the little ones)
1/4 cup olive oil
2 lbs fresh tomatoes skin removed or 28oz can diced tomatoes drained
1 Tbsp tomato paste
1 can artichoke hearts
2 Tbsp capers
1/2 cup white wine
1/4 cup cream
5 cloves garlic minced
1 tsp oregano
1/2 tsp red pepper flakes
black pepper

in a large skillet heat the olive oil.add the garlic and  cook 30 seconds. if using fresh tomatos crush with your hands and add to the garlic, or add the canned tomatoes.
add the tomato paste,wine,oregano,red pepper flakes,a few turns on a pepper mill of black pepper,artichoke hearts and capers
bring to a boil,reduce heat and simmer 10 minutes
add the scallops and cream and simmer 8-10 minutes until scallops are cooked

serve over pasta with parmesan cheese

stuffed cabbage (also called galuptzi)

Standard

this is a recipe for russian or jewish style stuffed cabbage
I got this recipe a while ago from a friend of mine. I modified a little and tried it tonight.. excellent but does require a little time

1 Lb ground beef
1/4 cup uncooked rice
1 egg
1 onion grated
2 carrots grated
1/4 cup lemon juice
1/2 cup brown sugar
2 cups tomato sauce
15 or so cabbage leaves

mix the ground beef,rice,egg,grated onion and carrots
set aside
blanch the cabbage leaves in boiling water 3 minutes
drain the cabbage
put a ball of meat in the center of a cabbage leave and roll up,pushing the sides in.
place seam side down in an oven safe large saute pan
repeat with the remain leaves,packing the cabbage rolls tightly in the pan
In a bowl mix the tomato sauce,brown sugar and lemon juice
pour over the cabbage
add enough water to the pan to mostly cover the cabbage
bring to a boil and cover tightly.
cook over medium heat for 30 minutes
turn heat down to a low simmer and continue cooking 20 minutes more
remove lid and place in preheated 350 oven for 20 minutes or until the top starts to brown. If needed add a little hot water to the pan

serves 4
