scallop and artichoke pasta sauce


a simple sauce for pasta. makes enough for 1lb pasta /4 servings

1 lb bay scallops (the little ones)
1/4 cup olive oil
2 lbs fresh tomatoes skin removed or 28oz can diced tomatoes drained
1 Tbsp tomato paste
1 can artichoke hearts
2 Tbsp capers
1/2 cup white wine
1/4 cup cream
5 cloves garlic minced
1 tsp oregano
1/2 tsp red pepper flakes
black pepper

in a large skillet heat the olive oil.add the garlic and  cook 30 seconds. if using fresh tomatos crush with your hands and add to the garlic, or add the canned tomatoes.
add the tomato paste,wine,oregano,red pepper flakes,a few turns on a pepper mill of black pepper,artichoke hearts and capers
bring to a boil,reduce heat and simmer 10 minutes
add the scallops and cream and simmer 8-10 minutes until scallops are cooked

serve over pasta with parmesan cheese
