Honey mustard chicken with curry


1 cut up chicken
1 tsp paprika
1/4 tsp ground black pepper
1/2 tsp madras curry powder
1/4 cup honey
2 tbsp apricot jam or preserves
3 Tbsp dijon mustard

place the chicken in a roasting pan
mix the curry,pepper and paprika together and sprinkle over the chicken
in a small bown mix the apricot jam,honey and mustard.
pour over the chicken.
refrigerate 1 hour up to overnight to marinate.

bake  in a preheated 350 oven 50 minutes.

serves 3-4
