herb crusted standing rib roast with horseradish cream sauce


4 1/2 bone in standing rib roast (2 rib roast)
1 Tbsp fresh rosemary chopped
1 Tbsp fresh thyme chopped
1/2 Tbsp garlic powder

Horseradish cream sauce
1/4 cup sour cream
3 Tbsp horseradish
juice from 1/2 lemon


Preheat the oven to 450
Mix the rosemary,thyme and garlic powder together in a small bowl
pat into the roast all over

Place in a roasting pan and put in the oven fat side up
cook 30 min
lower heat to 350
cook about 20 minutes/pound,until a meat thermometer reads about 5 degrees below the desired doneness (135 for medium rare)
remove from the oven and let sit 15 minutes. the roast will gain 5-10 degrees while resting

whisk the ingredients together and place in the fridge for an hour so the flavors meld

serves 4
