a very easy cajun side dish

4 ears fresh corn
1 medium onion diced
1 bell pepper diced
1/2 jalapeno ribs and seeds removed,diced
3/4 cup heavy cream
1 tsp dried thyme
oil

use a knife to remove the kernels from the cobs
in a skillet heat the oil
saute the onion 5 minutes until soft
add the peppers and saute 3 more minutes
add the corn and saute 3 minutes
add the cream and thyme and cook over medium heat until thickened about 5 minutes

serves 3-4
